Description

Elegant roasted beet and blue cheese towers layered with creamy cheese, toasted nuts, and balsamic glaze for a showstopping vegetarian dish.


Ingredients

Scale
  • 1 tbsp olive oil
  • Salt & pepper, to taste
  • Balsamic glaze, for drizzling
  • 23 medium red or golden beets
  • 3 oz blue cheese (or goat cheese), crumbled or softened
  • 1/4 cup chopped walnuts or pecans, toasted
  • Optional: microgreens or arugula for garnish


Instructions

  1. Preheat oven to 400°F (200°C). Wash and wrap beets in foil. Roast for 45–60 minutes until tender.
  2. Cool slightly, peel, and slice into 1/4-inch rounds.
  3. Mash or soften cheese for spreading.
  4. On a plate, layer beet slices and cheese to make towers (2–3 layers each).
  5. Top with toasted nuts, a drizzle of balsamic glaze, and garnish with microgreens or arugula.

Notes

  • Use golden beets for less staining and color contrast.
  • Goat cheese or feta makes a milder substitute for blue cheese.
  • Chill towers before serving for cleaner layers.
