- 3 cups Rice Krispy cereal
- 1/2 cup unsalted butter
- 10 ounces marshmallows
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
Instructions
- In a large pot, melt the butter over low heat. Add the marshmallows and stir until they are completely melted.
- Remove from heat and mix in the Rice Krispy cereal until well coated.
- Press the mixture into the bottom of a greased springform pan to form the crust.
- In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Pour the cheesecake filling over the Rice Krispy crust and smooth the top.
- Refrigerate for at least 4 hours or until firm.
- Slice and serve chilled.
