Ingredients

  • 3 cups Rice Krispies
  • 1 cup mini marshmallows
  • 1/2 cup butter
  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream


Instructions

  1. In a saucepan, melt butter and marshmallows over low heat. Stir until smooth.
  2. Add Rice Krispies and mix until evenly coated.
  3. Press the mixture into the bottom of a greased springform pan and set aside.
  4. In a bowl, beat cream cheese until smooth. Gradually add powdered sugar and vanilla, mixing until combined.
  5. In another bowl, whip the heavy cream until stiff peaks form, then fold into the cream cheese mixture.
  6. Spread the cheesecake filling over the Rice Krispie crust.
  7. Chill in the refrigerator for at least 4 hours or until set.
  8. Slice and serve chilled.
