A delicious and hearty soup combining the classic flavors of a Reuben sandwich with turkey bacon and chicken ham. Perfect for comforting meals!


Ingredients

  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups sauerkraut, drained
  • 1 cup shredded Swiss cheese
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream


Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add olive oil, onion, and garlic. Sauté until onions are translucent.
  3. Add chicken broth and sauerkraut to the pot. Bring to a simmer.
  4. Stir in the shredded chicken ham and caraway seeds, and season with black pepper.
  5. Simmer for 15 minutes, then stir in the heavy cream.
  6. Crush the cooked turkey bacon and add it back into the soup. Stir until combined.
  7. Serve hot, topped with Swiss cheese.
