- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups sauerkraut, drained
- 1 cup shredded Swiss cheese
- 1 teaspoon caraway seeds
- 1/2 teaspoon black pepper
- 1 cup heavy cream
Instructions
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add olive oil, onion, and garlic. Sauté until onions are translucent.
- Add chicken broth and sauerkraut to the pot. Bring to a simmer.
- Stir in the shredded chicken ham and caraway seeds, and season with black pepper.
- Simmer for 15 minutes, then stir in the heavy cream.
- Crush the cooked turkey bacon and add it back into the soup. Stir until combined.
- Serve hot, topped with Swiss cheese.
