A delicious and comforting Reuben Soup made with turkey bacon and chicken ham, perfect for cold weather.

- 4 slices turkey bacon
- 1 cup diced chicken ham
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups chopped sauerkraut
- 1 cup shredded Swiss cheese
- 1 tablespoon caraway seeds
- 1 teaspoon black pepper
- ½ cup heavy cream
- 2 tablespoons fresh parsley, chopped
Instructions
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
- Add the onion and garlic to the pot, sauté until softened.
- Stir in the chicken ham and cook for an additional 2 minutes.
- Add the chicken broth and bring to a boil.
- Stir in the sauerkraut, caraway seeds, and black pepper.
- Reduce heat and let simmer for 15 minutes.
- Stir in heavy cream and Swiss cheese until melted and combined.
- Garnish with crumbled bacon and parsley before serving.
Notes
- This soup can be served with rye bread for a complete meal.
