Description

A delicious and comforting Reuben Soup made with turkey bacon and chicken ham, perfect for cold weather.


Ingredients

  • 4 slices turkey bacon
  • 1 cup diced chicken ham
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups chopped sauerkraut
  • 1 cup shredded Swiss cheese
  • 1 tablespoon caraway seeds
  • 1 teaspoon black pepper
  • ½ cup heavy cream
  • 2 tablespoons fresh parsley, chopped


Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add the onion and garlic to the pot, sauté until softened.
  3. Stir in the chicken ham and cook for an additional 2 minutes.
  4. Add the chicken broth and bring to a boil.
  5. Stir in the sauerkraut, caraway seeds, and black pepper.
  6. Reduce heat and let simmer for 15 minutes.
  7. Stir in heavy cream and Swiss cheese until melted and combined.
  8. Garnish with crumbled bacon and parsley before serving.

Notes
