Description

A light and creamy lime mousse cheesecake topped with a zesty lime glaze, perfect for any occasion.


Ingredients

  • 1 1/2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1/4 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 cup lime juice for glaze
  • 2 tablespoons cornstarch
  • 1/4 cup sugar for glaze


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the crushed graham crackers and melted butter, then press the mixture into the bottom of a springform pan.
  3. Bake the crust for 10 minutes, then set aside to cool.
  4. In a large bowl, beat the cream cheese and granulated sugar until smooth.
  5. Add the lime juice, lime zest, and vanilla extract; mix until well combined.
  6. In another bowl, whip the heavy cream with powdered sugar until soft peaks form, then gently fold it into the cream cheese mixture.
  7. Pour the mousse over the cooled crust and refrigerate for at least 4 hours.
  8. For the glaze, whisk together lime juice, cornstarch, and sugar in a saucepan over medium heat until thickened, then let cool.
  9. Spread the glaze over the set mousse before serving.
