			- 1 1/2 cups crushed graham crackers
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1/4 cup fresh lime juice
- 1 tablespoon lime zest
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1/2 cup lime juice for glaze
- 2 tablespoons cornstarch
- 1/4 cup sugar for glaze
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the crushed graham crackers and melted butter, then press the mixture into the bottom of a springform pan.
- Bake the crust for 10 minutes, then set aside to cool.
- In a large bowl, beat the cream cheese and granulated sugar until smooth.
- Add the lime juice, lime zest, and vanilla extract; mix until well combined.
- In another bowl, whip the heavy cream with powdered sugar until soft peaks form, then gently fold it into the cream cheese mixture.
- Pour the mousse over the cooled crust and refrigerate for at least 4 hours.
- For the glaze, whisk together lime juice, cornstarch, and sugar in a saucepan over medium heat until thickened, then let cool.
- Spread the glaze over the set mousse before serving.
