A light and creamy cheesecake featuring refreshing lemon and fresh strawberries that is simple to make.

			- 1 ½ cups crushed graham crackers
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ¼ cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 cups fresh strawberries, sliced
- ½ cup strawberry sauce
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine crushed graham crackers and melted butter; press into the bottom of a springform pan to form the crust.
- In another bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in vanilla, lemon juice, and lemon zest until fully combined.
- Pour the mixture over the crust in the springform pan.
- Bake for 45-50 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours.
- Top with sliced strawberries and strawberry sauce before serving.
Notes
- For a richer flavor, consider adding a layer of whipped cream on top.
- You can substitute the strawberries with other berries if preferred.
- This cheesecake can be made a day in advance for better taste.
