Ingredients

  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cups fresh strawberries, sliced
  • ½ cup strawberry sauce


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine crushed graham crackers and melted butter; press into the bottom of a springform pan to form the crust.
  3. In another bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla, lemon juice, and lemon zest until fully combined.
  6. Pour the mixture over the crust in the springform pan.
  7. Bake for 45-50 minutes or until the center is set.
  8. Allow to cool, then refrigerate for at least 4 hours.
  9. Top with sliced strawberries and strawberry sauce before serving.
