Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the crushed graham crackers, granulated sugar, and melted butter. Press the mixture into the bottom of a springform pan.
- In a separate bowl, beat the cream cheese and powdered sugar together until smooth. Add the vanilla extract and mix well.
- In another bowl, whip the heavy cream until soft peaks form, then fold it into the cream cheese mixture.
- Divide the mixture in half. To one half, add cocoa powder and red food coloring, mixing thoroughly.
- Pour the red velvet mixture over the crust, followed by the plain cheesecake mixture. Swirl with a knife to create a marbled effect.
- Bake for 50-60 minutes until set. Let cool, then refrigerate for at least 4 hours.
- Top with fresh strawberries before serving.

- For a firmer cheesecake, increase the baking time.
- Use fresh strawberries for seasoning instead of syrup for a healthier option.
