- 1 cup canned pumpkin puree
- 1 egg or flax egg
- 1/4 cup brown sugar
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- Pinch of salt
- Whipped cream or vanilla ice cream, for serving (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking dish with parchment paper.
- Cut tops off apples and scoop out core, leaving 1/4-inch walls.
- Whisk pumpkin puree, egg, sugar, pumpkin pie spice, cinnamon, vanilla, and salt until smooth.
- Spoon filling into apples evenly.
- Place in baking dish and bake 35–40 minutes until apples are tender and filling is set.
- Cool 10 minutes before serving with whipped cream or ice cream if desired.
