Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onions, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 package puff pastry sheets


Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large saucepan, melt butter over medium heat. Add onions and cook until soft.
  3. Stir in flour and cook for 1 minute, then gradually whisk in chicken broth and milk.
  4. Add in shredded chicken, carrots, peas, potatoes, salt, pepper, and thyme, and stir until thickened.
  5. Pour the chicken mixture into a baking dish and cover with puff pastry.
  6. Cut slits in the pastry for steam to escape.
  7. Bake for 30-35 minutes, or until the pastry is golden brown.
  8. Let it cool for a few minutes before serving.
