Ingredients

  • 3 pounds beef loin
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 cup beef broth


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Rub the beef loin with olive oil, salt, and pepper.
  3. In a large skillet, heat over medium-high heat and sear the meat on all sides until browned.
  4. Add minced garlic, rosemary, and thyme, mixing well.
  5. Transfer the beef to a roasting pan and pour beef broth around it.
  6. Cover the pan with foil and roast for about 2 hours.
  7. Remove the foil and cook for an additional 30 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Let rest for 15 minutes before slicing.

Notes

  • For a spicier version, add cayenne pepper to the seasoning.
  • Let the roast come to room temperature before cooking for better results.
