- 3 pounds beef ribs
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups carrots, cut into chunks
- 2 cups parsnips, cut into chunks
- 2 cups potatoes, cut into chunks
- 2 cups beef broth
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, heat the vegetable oil over medium-high heat.
- Season the beef ribs with salt and pepper and brown them on all sides in the pot.
- Remove the ribs and set aside. In the same pot, add the onions and garlic, and sauté until soft.
- Add the carrots, parsnips, and potatoes, and stir for a few minutes.
- Return the beef ribs to the pot and add the beef broth, red wine, tomato paste, thyme, and paprika.
- Bring to a simmer, cover, and transfer to the oven.
- Bake for about 2.5 to 3 hours, until the ribs are tender.
- Serve hot, garnished with fresh herbs if desired.
Notes
- For extra flavor, marinate the beef ribs overnight.
- Feel free to use other root vegetables according to your preference.
