Ingredients

  • 3 pounds beef ribs
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups carrots, cut into chunks
  • 2 cups parsnips, cut into chunks
  • 2 cups potatoes, cut into chunks
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, heat the vegetable oil over medium-high heat.
  3. Season the beef ribs with salt and pepper and brown them on all sides in the pot.
  4. Remove the ribs and set aside. In the same pot, add the onions and garlic, and sauté until soft.
  5. Add the carrots, parsnips, and potatoes, and stir for a few minutes.
  6. Return the beef ribs to the pot and add the beef broth, red wine, tomato paste, thyme, and paprika.
  7. Bring to a simmer, cover, and transfer to the oven.
  8. Bake for about 2.5 to 3 hours, until the ribs are tender.
  9. Serve hot, garnished with fresh herbs if desired.

Notes

  • For extra flavor, marinate the beef ribs overnight.
  • Feel free to use other root vegetables according to your preference.
