Ingredients

  • 1 bay leaf
  • 1 cup olive oil


Instructions

  1. In a large pot, bring water to a boil and add shrimp. Cook until pink and firm, about 2-3 minutes. Drain and set aside.
  2. In a bowl, whisk together vinegar, sugar, salt, red pepper flakes, black peppercorns, garlic, and bay leaf.
  3. Add the shrimp to the vinegar mixture and stir to combine. Cover and refrigerate for at least 4 hours or overnight.
  4. Before serving, drizzle with olive oil and enjoy chilled.
