- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup creamy peanut butter
- 1/2 cup powdered sugar
- 1 cup heavy cream
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the flour, cocoa powder, baking powder, and salt.
- In another bowl, beat the eggs and sugar together until light and fluffy. Add the vanilla extract and mix well.
- Gradually add the dry ingredients to the egg mixture, mixing until just combined.
- Spread the batter evenly onto the prepared baking sheet and bake for 12-15 minutes, or until the cake springs back when touched.
- Remove from the oven and let cool for a few minutes. Then, carefully roll the cake while still warm, using the parchment paper to assist.
- In a separate bowl, beat together the peanut butter and powdered sugar until smooth.
- In another bowl, whip the heavy cream until stiff peaks form, then fold it into the peanut butter mixture.
- Once the cake is cooled, unroll it gently, spread the peanut butter mixture over it, and then roll it back up.
- Coat the roll with melted chocolate chips and chill in the fridge for at least an hour before serving.
Notes
- For a richer flavor, you can add a pinch of espresso powder to the batter.
