Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 cup heavy cream
  • 1/2 cup chocolate chips


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix together the flour, cocoa powder, baking powder, and salt.
  3. In another bowl, beat the eggs and sugar together until light and fluffy. Add the vanilla extract and mix well.
  4. Gradually add the dry ingredients to the egg mixture, mixing until just combined.
  5. Spread the batter evenly onto the prepared baking sheet and bake for 12-15 minutes, or until the cake springs back when touched.
  6. Remove from the oven and let cool for a few minutes. Then, carefully roll the cake while still warm, using the parchment paper to assist.
  7. In a separate bowl, beat together the peanut butter and powdered sugar until smooth.
  8. In another bowl, whip the heavy cream until stiff peaks form, then fold it into the peanut butter mixture.
  9. Once the cake is cooled, unroll it gently, spread the peanut butter mixture over it, and then roll it back up.
  10. Coat the roll with melted chocolate chips and chill in the fridge for at least an hour before serving.

Notes

  • For a richer flavor, you can add a pinch of espresso powder to the batter.
