Peach Honey Dijon Balsamic Vinaigrette Recipe

  • Author: Ava
  • Total Time: 5 minutes
  • Yield: About 1 cup 1x

Description

A light, flavorful vinaigrette made with fresh peaches, honey, Dijon mustard, and balsamic vinegar. This dressing is perfect for salads, marinades, or as a drizzle over roasted vegetables. Simple to make and bursting with fresh, natural flavors.

Ingredients

Scale
  • 1 ripe peach, peeled and diced (or ½ cup peach purée)
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • ¼ cup balsamic vinegar
  • ½ cup olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder (optional)
  • ½ tsp dried thyme or 1 tsp fresh thyme (optional)

Instructions

  • Blend the Base: Add peach, honey, Dijon mustard, balsamic vinegar, salt, black pepper, and garlic powder (if using) into a blender. Blend until smooth.
  • Emulsify: With the blender running on low, slowly drizzle in olive oil until the dressing is creamy and well combined.
  • Adjust the Flavor: Taste and adjust seasoning. Add more honey for sweetness or balsamic for tang.
  • Serve & Store: Use immediately or store in an airtight container in the refrigerator for up to 1 week.

Notes

  • For a vegan alternative, substitute honey with maple syrup.
  • Use white balsamic vinegar for a lighter, fruitier version.
  • If the vinaigrette separates in the fridge, give it a good shake before using.
