Description
A light, flavorful vinaigrette made with fresh peaches, honey, Dijon mustard, and balsamic vinegar. This dressing is perfect for salads, marinades, or as a drizzle over roasted vegetables. Simple to make and bursting with fresh, natural flavors.
Ingredients
Scale
- 1 ripe peach, peeled and diced (or ½ cup peach purée)
- 2 tbsp honey
- 1 tbsp Dijon mustard
- ¼ cup balsamic vinegar
- ½ cup olive oil
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder (optional)
- ½ tsp dried thyme or 1 tsp fresh thyme (optional)
Instructions
- Blend the Base: Add peach, honey, Dijon mustard, balsamic vinegar, salt, black pepper, and garlic powder (if using) into a blender. Blend until smooth.
- Emulsify: With the blender running on low, slowly drizzle in olive oil until the dressing is creamy and well combined.
- Adjust the Flavor: Taste and adjust seasoning. Add more honey for sweetness or balsamic for tang.
- Serve & Store: Use immediately or store in an airtight container in the refrigerator for up to 1 week.
Notes
- For a vegan alternative, substitute honey with maple syrup.
- Use white balsamic vinegar for a lighter, fruitier version.
- If the vinaigrette separates in the fridge, give it a good shake before using.
