Description

A refreshing and colorful Orzo Salad with Black Beans and Corn that’s easy to make and packed with flavor.


Ingredients

  • 1 cup orzo pasta
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Cook the orzo pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the black beans, corn, red bell pepper, red onion, and cilantro.
  3. Add the cooled orzo to the bowl.
  4. In a small bowl, whisk together the olive oil, lime juice, cumin, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For extra flavor, add diced avocado right before serving.
