Description

Ingredients

  • 8 ounces pasta (any type)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, sliced
  • 1 cup broccoli florets
  • 2 cups vegetable broth
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup grated parmesan cheese (optional)


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add garlic and sauté for 1 minute until fragrant.
  3. Stir in the chopped bell peppers, zucchini, and broccoli, cooking for about 5 minutes.
  4. Add the halved cherry tomatoes and cook for another 2 minutes.
  5. Pour in the vegetable broth and bring it to a boil.
  6. Once boiling, add the pasta and Italian seasoning; stir well.
  7. Reduce heat and simmer for 10-12 minutes until pasta is cooked and liquid is absorbed.
  8. Season with salt and pepper, then stir in parmesan cheese if desired.
  9. Serve immediately topped with additional parmesan if desired.

  • Feel free to use any seasonal vegetables you have on hand.
  • This dish can be easily made vegan by omitting the parmesan cheese.
