- 1 cup Arborio rice
- 4 cups whole milk
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup raisins (optional)
Instructions
- In a medium saucepan, combine the rice and milk over medium heat, stirring occasionally.
- Once the milk comes to a simmer, reduce the heat to low and cook, stirring frequently, until the rice is tender, about 20 minutes.
- Add sugar, vanilla extract, cinnamon, and salt, and stir until well combined.
- In a separate bowl, beat the eggs. Gradually mix in a small amount of the rice mixture to temper the eggs, then add the egg mixture back into the saucepan.
- Continue to cook for another 5-10 minutes until the pudding has thickened.
- If using raisins, stir them in during the last few minutes of cooking.
- Remove from heat and let it cool slightly before serving.
Notes
- Serve warm or chilled, topped with a sprinkle of cinnamon or nutmeg.
- This pudding can also be dressed up with fresh fruit or nuts for added texture.
