Description

Ingredients

  • 1 cup Arborio rice
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup raisins (optional)


Instructions

  1. In a medium saucepan, combine the rice and milk over medium heat, stirring occasionally.
  2. Once the milk comes to a simmer, reduce the heat to low and cook, stirring frequently, until the rice is tender, about 20 minutes.
  3. Add sugar, vanilla extract, cinnamon, and salt, and stir until well combined.
  4. In a separate bowl, beat the eggs. Gradually mix in a small amount of the rice mixture to temper the eggs, then add the egg mixture back into the saucepan.
  5. Continue to cook for another 5-10 minutes until the pudding has thickened.
  6. If using raisins, stir them in during the last few minutes of cooking.
  7. Remove from heat and let it cool slightly before serving.

Notes

  • Serve warm or chilled, topped with a sprinkle of cinnamon or nutmeg.
  • This pudding can also be dressed up with fresh fruit or nuts for added texture.
