Ingredients

  • 2 cups fresh blueberries
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, mix together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in the blueberries.
  7. Pour the batter into a greased cake pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. While the cake cools, whip the heavy cream until stiff peaks form.
  10. Frost the cooled cake with whipped cream and decorate with additional blueberries.

Notes

  • For best results, use fresh blueberries. Frozen blueberries can work but may alter the texture.
