Ingredients

  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup dry red wine
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 bay leaf


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large oven-safe pot, heat the olive oil over medium-high heat.
  3. Season the beef roast with salt and pepper, then sear on all sides until browned.
  4. Remove the roast and set aside. In the same pot, add the onions and garlic, sautéing until softened.
  5. Deglaze the pot with red wine, scraping up any brown bits.
  6. Add the beef broth, soy sauce, Worcestershire sauce, thyme, and bay leaf to the pot.
  7. Return the roast to the pot, cover, and place in the oven.
  8. Cook for 3-4 hours, or until the beef is tender.
  9. Remove from oven and let rest before serving.
