- 2 tablespoons olive oil
- 2 large onions, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup dry red wine

- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 bay leaf
Instructions
- Preheat the oven to 325°F (163°C).
- In a large oven-safe pot, heat the olive oil over medium-high heat.
- Season the beef roast with salt and pepper, then sear on all sides until browned.
- Remove the roast and set aside. In the same pot, add the onions and garlic, sautéing until softened.
- Deglaze the pot with red wine, scraping up any brown bits.
- Add the beef broth, soy sauce, Worcestershire sauce, thyme, and bay leaf to the pot.
- Return the roast to the pot, cover, and place in the oven.
- Cook for 3-4 hours, or until the beef is tender.
- Remove from oven and let rest before serving.
