These Mini Meatloaf Muffins are the perfect easy comfort food, topped with creamy mashed potato frosting.
Ingredients

- 1 pound ground beef
- 1 cup breadcrumbs
- 1 egg
- 1/2 cup milk
- 1 onion, finely chopped
- 1 tablespoon Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups mashed potatoes
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, Worcestershire sauce, garlic powder, salt, and black pepper.
- Mix until well combined.
- Spoon the mixture into a greased muffin tin.
- Bake for 25-30 minutes or until cooked through.
- While muffins are baking, prepare mashed potatoes.
- Once muffins are done, top each with a dollop of mashed potatoes to create frosting.
Notes
- For added flavor, mix in some herbs into the meat mixture.
