Description

These Mini Meatloaf Muffins are the perfect easy comfort food, topped with creamy mashed potato frosting.


Ingredients

Scale
  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 1/2 cup milk
  • 1 onion, finely chopped
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mashed potatoes


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, egg, milk, onion, Worcestershire sauce, garlic powder, salt, and black pepper.
  3. Mix until well combined.
  4. Spoon the mixture into a greased muffin tin.
  5. Bake for 25-30 minutes or until cooked through.
  6. While muffins are baking, prepare mashed potatoes.
  7. Once muffins are done, top each with a dollop of mashed potatoes to create frosting.
