Description

Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/4 cup sour cream
  • 1/4 cup fresh lemon juice


Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter until combined.
  3. Press the mixture into the bottom of a muffin tin lined with cupcake liners.
  4. In a mixing bowl, beat the softened cream cheese and sugar until smooth.
  5. Add vanilla extract, eggs, sour cream, and lemon juice, mixing until fully combined.
  6. Pour the cream cheese mixture over the prepared crusts in the muffin tin.
  7. Bake for 20-25 minutes or until the center is set.
  8. Let them cool, then refrigerate for at least 2 hours before serving.

Notes

  • For a different flavor, try adding chocolate or fruit purees to the cream cheese mixture.
