- 1 cup graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/4 cup sour cream
- 1/4 cup fresh lemon juice
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs with melted butter until combined.
- Press the mixture into the bottom of a muffin tin lined with cupcake liners.
- In a mixing bowl, beat the softened cream cheese and sugar until smooth.
- Add vanilla extract, eggs, sour cream, and lemon juice, mixing until fully combined.
- Pour the cream cheese mixture over the prepared crusts in the muffin tin.
- Bake for 20-25 minutes or until the center is set.
- Let them cool, then refrigerate for at least 2 hours before serving.
Notes
- For a different flavor, try adding chocolate or fruit purees to the cream cheese mixture.
- These can be made ahead of time and stored in the refrigerator.
