Description

Mini cheesecakes are the perfect dessert for any gathering or celebration. They are easy to make and incredibly indulgent!


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 1/4 cup powdered sugar


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a muffin tin lined with cupcake liners.
  4. In a separate bowl, beat the cream cheese until smooth.
  5. Add the granulated sugar and vanilla extract, mixing until well combined.
  6. Mix in the eggs one at a time, followed by the sour cream.
  7. Pour the cheesecake batter into the prepared crusts.
  8. Bake for 18-20 minutes until set and slightly jiggly in the center.
  9. Allow to cool, then refrigerate for at least 4 hours before serving.
