- 4 poblano peppers
- 1 cup shredded cheese
- 1/2 cup black beans
- 1/2 cup corn
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups breadcrumbs
- 2 eggs
- 1 cup flour
- 1 cup vegetable oil
Instructions
- Preheat your oven to 375°F (190°C).
- Roast poblano peppers until charred, then peel and chop them.
- In a bowl, mix cheese, black beans, corn, cumin, garlic powder, salt, and pepper.
- Form the mixture into balls around the poblano pieces.
- Dip each ball in flour, then in beaten eggs, and finally coat with breadcrumbs.
- Heat oil in a pan and fry the balls until golden brown.
- Transfer to a baking dish and bake for 15-20 minutes.
- Serve hot with your favorite salsa.
Notes
- For spicier balls, leave some seeds in the poblanos.
- These can also be baked instead of fried for a healthier option.
