Ingredients

  • 4 poblano peppers
  • 1 cup shredded cheese
  • 1/2 cup black beans
  • 1/2 cup corn
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups breadcrumbs
  • 2 eggs
  • 1 cup flour
  • 1 cup vegetable oil


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast poblano peppers until charred, then peel and chop them.
  3. In a bowl, mix cheese, black beans, corn, cumin, garlic powder, salt, and pepper.
  4. Form the mixture into balls around the poblano pieces.
  5. Dip each ball in flour, then in beaten eggs, and finally coat with breadcrumbs.
  6. Heat oil in a pan and fry the balls until golden brown.
  7. Transfer to a baking dish and bake for 15-20 minutes.
  8. Serve hot with your favorite salsa.

Notes

  • For spicier balls, leave some seeds in the poblanos.
  • These can also be baked instead of fried for a healthier option.
