Description

A delicious and easy-to-make Mexican casserole that combines turkey bacon and chicken ham for a flavorful dish.


Ingredients

  • 1 pound ground turkey
  • 6 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup salsa
  • 2 cups shredded cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 8 tortillas, cut into strips


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the turkey and turkey bacon until browned.
  3. Stir in chicken ham, black beans, corn, salsa, and spices.
  4. Layer half of the tortillas in a baking dish, followed by half of the mixture and half of the cheese.
  5. Repeat layers and top with remaining cheese.
  6. Bake for 25-30 minutes until cheese is bubbly.
  7. Let cool for a few minutes before serving.

Notes

  • For a vegetarian option, replace turkey with additional beans.
  • Feel free to add more spices or hot sauce for extra heat.
