- 1 pound ground turkey
- 6 slices turkey bacon
- 1 cup chicken ham, diced
- 1 can black beans, drained and rinsed
- 1 cup corn, drained
- 1 cup salsa
- 2 cups shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 bell pepper, chopped
- 1 onion, chopped
- 8 tortillas, cut into strips
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the turkey and turkey bacon until browned.
- Stir in chicken ham, black beans, corn, salsa, and spices.
- Layer half of the tortillas in a baking dish, followed by half of the mixture and half of the cheese.
- Repeat layers and top with remaining cheese.
- Bake for 25-30 minutes until cheese is bubbly.
- Let cool for a few minutes before serving.
Notes
- For a vegetarian option, replace turkey with additional beans.
- Feel free to add more spices or hot sauce for extra heat.
