- 2 medium sweet potatoes
- 8 ounces burrata cheese
- 4 slices turkey bacon
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon fresh chives, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and slice the sweet potatoes into rounds.
- Toss sweet potato rounds in olive oil, salt, and pepper, then spread them on a baking sheet.
- Bake for about 25 minutes until tender.
- Meanwhile, cook the turkey bacon in a skillet until crispy. Remove and crumble it.
- Once the sweet potatoes are done, top each round with a piece of burrata cheese and sprinkle crumbled bacon on top.
- Return to the oven for an additional 5 minutes to melt the burrata.
- Garnish with chopped chives before serving.
