- 1½ lbs ground chicken
- ¾ cup Italian breadcrumbs
- ½ cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 egg, beaten
- ¼ cup milk
- 1 tsp Italian seasoning
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp fresh parsley, chopped (or 1 tsp dried)
- ½ cup shredded mozzarella (optional)
- Topping:
- 2 tbsp butter, melted
- 1 clove garlic, minced
- 2 tbsp grated Parmesan cheese
- 1 tbsp chopped parsley
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet or grease a loaf pan.
- In a large bowl, mix ground chicken, breadcrumbs, Parmesan, garlic, egg, milk, seasonings, and parsley.
- Shape into a loaf or place in a loaf pan.
- Bake for 35–40 minutes or until internal temp reaches 165°F.
- Mix the topping ingredients in a small bowl.
- Brush topping over meatloaf at 30-minute mark. Return to oven for 5–10 more minutes.
- Add mozzarella in final 5 minutes if desired.
- Let rest for 5–10 minutes before slicing and serving.
Notes
- Use ground turkey if preferred.
- To make it gluten-free, substitute with gluten-free breadcrumbs.
- Customize with chopped spinach or red pepper flakes for extra flavor.
