Description

A delicious and healthy Mediterranean-inspired layered gratin made with beets, sweet potatoes, feta cheese, and walnuts.


Ingredients

Scale
  • 2 large beets
  • 2 medium sweet potatoes
  • 200 grams feta cheese
  • 100 grams walnuts, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and thinly slice the beets and sweet potatoes.
  3. Grease a baking dish with olive oil.
  4. Layer the beet slices at the bottom, followed by sweet potato slices.
  5. Sprinkle with feta cheese and walnuts.
  6. Drizzle more olive oil and season with oregano, salt, and pepper.
  7. Repeat the layering until all ingredients are used, finishing with feta and walnuts on top.
  8. Bake in the oven for 45-50 minutes until the top is golden and the vegetables are tender.
  9. Let it cool slightly before serving, garnishing with fresh parsley.

  • For extra flavor, add a splash of balsamic vinegar between the layers.
