- 2 large beets
- 2 medium sweet potatoes
- 200 grams feta cheese
- 100 grams walnuts, chopped
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Peel and thinly slice the beets and sweet potatoes.
- Grease a baking dish with olive oil.
- Layer the beet slices at the bottom, followed by sweet potato slices.
- Sprinkle with feta cheese and walnuts.
- Drizzle more olive oil and season with oregano, salt, and pepper.
- Repeat the layering until all ingredients are used, finishing with feta and walnuts on top.
- Bake in the oven for 45-50 minutes until the top is golden and the vegetables are tender.
- Let it cool slightly before serving, garnishing with fresh parsley.
Notes
- For extra flavor, add a splash of balsamic vinegar between the layers.
- This dish can be prepared ahead of time and reheated before serving.
