Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1/2 cup onion, finely chopped
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup ketchup
  • 4 cups mashed potatoes
  • 1/4 cup milk
  • 2 tablespoons butter
  • 1 teaspoon paprika


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, chopped onion, egg, garlic powder, salt, and pepper. Mix well.
  3. Form the mixture into cupcake shapes and place them in a muffin tin.
  4. Top each meatloaf cupcake with a spoonful of ketchup.
  5. Bake in the preheated oven for 25-30 minutes.
  6. While the meatloaf cupcakes are baking, prepare the whipped potatoes by mixing the mashed potatoes with milk, butter, and paprika until fluffy.
