- 1 pound ground beef
- 1 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 1 egg
- 1 teaspoon garlic powder

- 4 cups mashed potatoes
- 1/4 cup milk
- 2 tablespoons butter
- 1 teaspoon paprika
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, chopped onion, egg, garlic powder, salt, and pepper. Mix well.
- Form the mixture into cupcake shapes and place them in a muffin tin.
- Top each meatloaf cupcake with a spoonful of ketchup.
- Bake in the preheated oven for 25-30 minutes.
- While the meatloaf cupcakes are baking, prepare the whipped potatoes by mixing the mashed potatoes with milk, butter, and paprika until fluffy.
- Once the meatloaf cupcakes are done, remove them from the oven and top with the whipped potato mixture.
