Ingredients
Scale
- 4 salmon fillets (6 oz each)
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 garlic cloves, minced
- 1/4 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1 teaspoon Dijon mustard
- 1/2 cup freshly grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 teaspoon lemon juice (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place salmon fillets skin-side down on the sheet. Season with salt, pepper, and a drizzle of olive oil.
- Bake the salmon for 10–12 minutes or until cooked through and flaky.
- While the salmon bakes, melt butter in a skillet over medium heat and sauté garlic for 1 minute.
- Add sun-dried tomatoes and cook for 2 more minutes.
- Reduce heat to low, then stir in heavy cream and Dijon mustard. Simmer for 3–4 minutes.
- Stir in Parmesan and season with salt and pepper to taste.
- Remove salmon from the oven and spoon the sauce over each fillet.
- Garnish with parsley and a squeeze of lemon juice, if desired. Serve immediately.
Notes
- Use freshly grated Parmesan for best melting and flavor.
- Do not overcook the salmon; check for doneness at 10 minutes.
- Store leftovers in the fridge for up to 2 days.
- Freeze the salmon without sauce for better texture when reheated.
