  • 2 lbs sweet potatoes, peeled and cut into 1-inch cubes

  • 1/2 cup chopped walnuts, toasted
  • Optional: fresh parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss sweet potatoes with olive oil, maple syrup, cinnamon, salt, and pepper until evenly coated.
