- 4 boneless, skinless chicken breasts
- 1 ripe mango, diced
- 1 habanero pepper, seeded and minced
- 1 cup cream cheese, softened
- 1 lime, juiced
- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together the diced mango, habanero pepper, cream cheese, lime juice, cilantro, garlic powder, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the mango mixture.
- Place stuffed chicken breasts in a baking dish and cover with foil.
- Bake for 25-30 minutes, then remove the foil and bake for an additional 10 minutes until the chicken is cooked through.
- Let rest for a few minutes before serving.
Notes
- For a milder dish, use less habanero or substitute with a milder pepper.
- This recipe can also be grilled for added flavor.
