- 1 pound turkey bacon
- 2 cups diced bell peppers
- 1 cup chopped onions
- 2 cups black beans, drained and rinsed
- 1 cup corn kernels
- 2 cups shredded cheese
- 8 large eggs
- 1/2 cup milk
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the turkey bacon until crispy. Remove from heat and chop into pieces.
- In the same skillet, sauté the bell peppers and onions until softened.
- In a large mixing bowl, combine the sautéed vegetables, black beans, corn, cheese, cooked turkey bacon, eggs, milk, cumin, chili powder, salt, and pepper.
- Transfer the mixture to a greased casserole dish.
- Bake for 30-35 minutes, or until the casserole is set and lightly browned on top.
