Description

A delicious and convenient casserole perfect for Cinco de Mayo celebrations, featuring turkey bacon and fresh ingredients.


Ingredients

  • 1 pound turkey bacon
  • 2 cups diced bell peppers
  • 1 cup chopped onions
  • 2 cups black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups shredded cheese
  • 8 large eggs
  • 1/2 cup milk
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the turkey bacon until crispy. Remove from heat and chop into pieces.
  3. In the same skillet, sauté the bell peppers and onions until softened.
  4. In a large mixing bowl, combine the sautéed vegetables, black beans, corn, cheese, cooked turkey bacon, eggs, milk, cumin, chili powder, salt, and pepper.
  5. Transfer the mixture to a greased casserole dish.
  6. Bake for 30-35 minutes, or until the casserole is set and lightly browned on top.
