- 4 medium zucchini, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the sliced zucchini, minced garlic, oregano, salt, and pepper.
- In another bowl, mix the breadcrumbs, cheddar cheese, and half of the Parmesan cheese.
- Layer half of the zucchini mixture in a greased baking dish.
- Sprinkle half of the breadcrumb mixture over the zucchini layer.
- Repeat with the remaining zucchini and breadcrumb mixture.
- Drizzle the olive oil over the top and sprinkle with the remaining Parmesan cheese.
- Bake for 25-30 minutes or until golden brown and bubbly.
- Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add red pepper flakes to the breadcrumb mixture.
