Description

Ingredients

  • 4 medium zucchini, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced zucchini, minced garlic, oregano, salt, and pepper.
  3. In another bowl, mix the breadcrumbs, cheddar cheese, and half of the Parmesan cheese.
  4. Layer half of the zucchini mixture in a greased baking dish.
  5. Sprinkle half of the breadcrumb mixture over the zucchini layer.
  6. Repeat with the remaining zucchini and breadcrumb mixture.
  7. Drizzle the olive oil over the top and sprinkle with the remaining Parmesan cheese.
  8. Bake for 25-30 minutes or until golden brown and bubbly.
  9. Garnish with chopped parsley before serving.

  • For a spicier kick, add red pepper flakes to the breadcrumb mixture.
