Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, shredded
  • 2 zucchini, sliced
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 3 cups white sauce (store-bought or homemade)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add onion, carrots, zucchini, and bell pepper; sauté until tender, about 5-7 minutes.
  4. Stir in garlic, spinach, and Italian seasoning; cook until spinach wilts.
  5. In a baking dish, spread a layer of white sauce on the bottom. Layer noodles, vegetable mixture, ricotta, mozzarella, and more sauce. Repeat layers, finishing with mozzarella and parmesan on top.
  6. Bake for 30-35 minutes, or until bubbly and golden.
  7. Let it cool for 10 minutes before slicing and serving.
