Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups mixed bell peppers, sliced
  • 1 cup zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken and cook until browned and cooked through, about 7-10 minutes.
  3. Remove chicken from skillet and set aside.
  4. Add mixed bell peppers, zucchini, and cherry tomatoes to the skillet, sautéing until they are tender.
  5. Return the chicken to the skillet and add garlic powder, onion powder, salt, and pepper.
  6. Stir everything to combine and cook for another 2-3 minutes.
  7. Serve warm.
