Instructions
Step 1: Prepare the Crust
- Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture evenly into the pan and bake for 8-10 minutes. Let it cool.
Step 2: Make the Cheesecake Layer
- Beat cream cheese and sugar until smooth. Add vanilla, lime juice, and zest.
- Fold in whipped heavy cream until combined.
- Spread the cheesecake mixture over the crust and refrigerate.
Step 3: Prepare the Lime Mousse
- Bloom gelatin powder in water for 5 minutes, then heat until dissolved.
- Beat heavy cream and powdered sugar until soft peaks form.
- Add lime juice, zest, and gelatin, then mix until smooth.
- Spread the mousse over the cheesecake layer and refrigerate for at least 4 hours.
Step 4: Serve & Enjoy!
- Remove from the springform pan and garnish with lime slices and whipped cream.
- Slice and serve chilled.
