- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup white chocolate chips
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- ¾ cup sour cream
- ¼ cup fresh lemon juice
- 2 tablespoons lemon zest
Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
- Melt white chocolate chips in a microwave until smooth and let cool slightly.
- In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
- Stir in sour cream, lemon juice, lemon zest, and melted white chocolate until well combined.
- Pour the filling over the crust in the springform pan.
- Bake for 50-60 minutes until the edges are set but the center is still jiggly. Turn off the oven and let the cheesecake sit for 1 hour.
- Remove from the oven and cool completely before refrigerating for at least 4 hours.
- Serve chilled and enjoy!
Notes
- For a more intense lemon flavor, add an additional tablespoon of lemon zest.
- Garnish with fresh berries or a lemon slice for presentation.
