Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup white chocolate chips
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • ¾ cup sour cream
  • ¼ cup fresh lemon juice
  • 2 tablespoons lemon zest


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. Melt white chocolate chips in a microwave until smooth and let cool slightly.
  4. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  5. Stir in sour cream, lemon juice, lemon zest, and melted white chocolate until well combined.
  6. Pour the filling over the crust in the springform pan.
  7. Bake for 50-60 minutes until the edges are set but the center is still jiggly. Turn off the oven and let the cheesecake sit for 1 hour.
  8. Remove from the oven and cool completely before refrigerating for at least 4 hours.
  9. Serve chilled and enjoy!
