Description

Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 cups vegetable broth
  • 1/4 cup grated Parmesan cheese
  • Salt to taste
  • Fresh parsley for garnish


Instructions

  1. In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. Add the orzo to the pan and stir to coat in the garlic butter.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer, uncovered, until the orzo is cooked and has absorbed most of the liquid, about 10-12 minutes.
  4. Stir in the lemon juice, lemon zest, and Parmesan cheese. Season with salt to taste.
  5. Remove from heat and garnish with fresh parsley before serving.

Notes

  • For added flavor, you can include some red pepper flakes for a little heat.
