- 1 cup orzo pasta
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 2 cups vegetable broth
- 1/4 cup grated Parmesan cheese
- Salt to taste
- Fresh parsley for garnish
Instructions
- In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the orzo to the pan and stir to coat in the garlic butter.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer, uncovered, until the orzo is cooked and has absorbed most of the liquid, about 10-12 minutes.
- Stir in the lemon juice, lemon zest, and Parmesan cheese. Season with salt to taste.
- Remove from heat and garnish with fresh parsley before serving.
Notes
- For added flavor, you can include some red pepper flakes for a little heat.
