- 8 oz pasta of choice
- 2 chicken breasts, sliced
- 1 lemon, zested and juiced
- 2 tablespoons olive oil
- 1/4 cup capers, rinsed and drained
- 2 cloves garlic, minced
- 1/4 cup fresh basil, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a pan, heat olive oil over medium heat and add chicken slices; season with salt and pepper.
- Cook until the chicken is brown and cooked through, about 6-7 minutes.
- Add garlic, capers, lemon zest, and lemon juice; stir for another 2 minutes.
- Mix in the cooked pasta and fresh basil; combine well.
- Serve immediately, garnished with additional basil if desired.
Notes
- For extra flavor, marinate the chicken in lemon juice and basil for 30 minutes before cooking.
- Feel free to add vegetables like spinach or cherry tomatoes.
