Description

  • 1/2 cup molasses
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1 tbsp lemon zest
  • 1 tbsp orange zest
  • 2 tbsp lemon juice
  • 2 3/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground allspice
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1 cup chopped almonds or hazelnuts
  • Optional: 1/2 cup candied orange peel
  • For Glaze: 1 cup powdered sugar, 2 tbsp milk or water
  • Optional: melted chocolate for dipping

Instructions

  1. In a saucepan, heat honey and molasses until just bubbling. Remove from heat.
  2. Stir in brown sugar and let the mixture cool slightly.
  3. Add egg, lemon zest, orange zest, and lemon juice. Mix well.
  4. Whisk dry ingredients (flour, baking soda, spices, salt) in a separate bowl.
  5. Combine wet and dry ingredients. Stir just until incorporated.
  6. Fold in nuts and candied peel (if using).
  7. Cover dough and refrigerate for 4 hours or overnight.
  8. Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  9. Roll dough into 1-inch balls, place 2 inches apart, and flatten slightly.
  10. Bake for 10–12 minutes until edges are set. Cool on a wire rack.
  11. Dip in glaze or brush it on while warm. Optionally dip in melted chocolate.
