Description

Lasagna Soup is a deconstructed version of the beloved Italian dish, transformed into a comforting, hearty soup. It combines the classic flavors of lasagna – rich tomato sauce, ground meat, creamy cheeses, and herbs – in a warm, inviting bowl.


Ingredients

  • 1 lb ground beef or Italian sausage
  • 8 lasagna noodles, broken into pieces
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup water
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

  1. Brown the meat in a large pot; drain excess fat.
  2. Sauté onion and garlic with the meat until translucent.
  3. Add tomatoes, broth, water, oregano, red pepper flakes, salt, and pepper. Simmer.
  4. Add broken lasagna pieces; cook until al dente.
  5. Combine cheeses in a bowl.
  6. Serve soup hot with a dollop of cheese mixture and basil.

Notes

  • Substitute ground meat with mushrooms or lentils for a vegetarian option.
  • Pasta can be cooked separately to prevent it from absorbing too much broth.
