  • 1 lb ground beef (or mix of beef and pork)
  • 1/2 cup Italian breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 garlic cloves, minced
  • Salt and black pepper to taste
  • 8 cups chicken broth
  • 1 cup small pasta (acini di pepe or orzo)
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 small onion, finely chopped
  • 2 cups fresh spinach or escarole, chopped
  • 1 tbsp olive oil
  • Grated Parmesan and parsley for garnish

Instructions

  1. In a bowl, mix beef, breadcrumbs, cheese, parsley, egg, garlic, salt, and pepper.
  2. Form into 1-inch meatballs and set aside.
  3. In a large pot, heat olive oil over medium. Sauté onion, carrots, celery, and garlic for 5 minutes.
  4. Pour in chicken broth and bring to a simmer.
  5. Gently add meatballs to the broth and simmer for 10 minutes.
  6. Add pasta and cook until al dente (6–8 minutes).
  7. Add spinach or escarole in the last 2 minutes of cooking.
  8. Adjust seasoning, then serve with Parmesan and parsley.
