Ingredients

  • 1 teaspoon dried basil
  • 1 cup whole wheat pasta
  • 2 cups spinach, fresh
  • Salt and pepper to taste


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, sautéing until the onion is translucent.
  3. Stir in the carrots and celery, cooking for an additional 5 minutes.
  4. Pour in the vegetable broth and diced tomatoes, then add the oregano and basil. Bring to a boil.
  5. Add the pasta and cook until al dente, about 8-10 minutes.
  6. Stir in the fresh spinach and cook until wilted.
  7. Season with salt and pepper to taste before serving.
