Ingredients

  • 8 ounces cream cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1/4 cup brown sugar (for caramelizing)


Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, beat the cream cheese until smooth.
  3. Add the granulated sugar and vanilla extract, mixing until well combined.
  4. Pour in the heavy cream and mix until incorporated.
  5. Add the eggs one at a time, mixing only until combined.
  6. Pour the mixture into mini cheesecake molds.
  7. Bake for 25-30 minutes or until set in the center.
  8. Remove from oven and let cool completely.
  9. Refrigerate for at least 4 hours before serving.
  10. Before serving, sprinkle brown sugar on top and use a kitchen torch to caramelize.
