Description
A comforting and flavorful Hungarian Mushroom Soup enhanced with sour cream and dill.
Ingredients

- 1 tablespoon olive oil
- 1 cup diced onion
- 2 cups sliced mushrooms
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 tablespoon soy sauce
- 4 cups vegetable broth
- 1 cup sour cream
- 2 tablespoons fresh dill, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent.
- Add the sliced mushrooms and cook until they are softened.
- Stir in the thyme, paprika, and soy sauce, cooking for another minute.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- In a bowl, mix sour cream and dill, then stir into the soup. Heat gently without boiling.
- Season with salt and pepper before serving.
Notes
- For an extra creaminess, blend part of the soup before adding the sour cream.
