Description

A comforting and flavorful Hungarian Mushroom Soup enhanced with sour cream and dill.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 2 cups sliced mushrooms
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 tablespoon soy sauce
  • 4 cups vegetable broth
  • 1 cup sour cream
  • 2 tablespoons fresh dill, chopped
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent.
  2. Add the sliced mushrooms and cook until they are softened.
  3. Stir in the thyme, paprika, and soy sauce, cooking for another minute.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  5. In a bowl, mix sour cream and dill, then stir into the soup. Heat gently without boiling.
  6. Season with salt and pepper before serving.

Notes

  • For an extra creaminess, blend part of the soup before adding the sour cream.
