Description

This moist Hummingbird Bread combines ripe bananas, crushed pineapple, and pecans, all topped with luscious cinnamon cream cheese frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3 ripe bananas, mashed
  • 1 cup crushed pineapple, drained
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup chopped pecans or walnuts
  • For the frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, beat eggs and sugars until smooth. Stir in bananas, pineapple, oil, and vanilla.
  4. Fold dry ingredients into wet mixture gently. Stir in chopped nuts.
  5. Pour batter into pan. Bake for 60–70 minutes or until toothpick comes out clean.
  6. Cool completely before frosting.
  7. For frosting, beat cream cheese and butter until creamy. Add powdered sugar, cinnamon, vanilla, and salt. Beat until fluffy.
  8. Spread frosting over cooled bread and serve.

  • Use very ripe bananas for best flavor.
  • Add shredded coconut for a tropical twist.
  • Store frosted bread in the fridge for up to 5 days.
