Description
This moist Hummingbird Bread combines ripe bananas, crushed pineapple, and pecans, all topped with luscious cinnamon cream cheese frosting.
Ingredients

- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 3 ripe bananas, mashed
- 1 cup crushed pineapple, drained
- 3/4 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup chopped pecans or walnuts
- For the frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a large bowl, beat eggs and sugars until smooth. Stir in bananas, pineapple, oil, and vanilla.
- Fold dry ingredients into wet mixture gently. Stir in chopped nuts.
- Pour batter into pan. Bake for 60–70 minutes or until toothpick comes out clean.
- Cool completely before frosting.
- For frosting, beat cream cheese and butter until creamy. Add powdered sugar, cinnamon, vanilla, and salt. Beat until fluffy.
- Spread frosting over cooled bread and serve.
Notes
- Use very ripe bananas for best flavor.
- Add shredded coconut for a tropical twist.
- Store frosted bread in the fridge for up to 5 days.
- Freeze unfrosted loaf for up to 3 months.
