Ingredients

  • 2 chicken breasts boneless and skinless
  • 2 tablespoons honey
  • 1 lime juiced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 avocado ripe
  • 1 cup cooked rice
  • 2 tablespoons cilantro
  • salt and pepper to taste


Instructions

  1. Marinate chicken breasts in honey, lime juice, garlic powder, cumin, salt, and pepper for at least 30 minutes.
  2. Grill or pan-fry the chicken until cooked through, about 6-7 minutes per side.
  3. While the chicken is cooking, mash the avocado and mix it with the cooked rice, cilantro, salt, and pepper.
  4. Once the chicken is cooked, slice it thinly.
  5. Stack the avocado rice and sliced chicken on a plate for serving.
