Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup fresh strawberries, sliced


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, beat eggs and granulated sugar until light and fluffy, then add vanilla.
  4. Gently fold in the flour mixture until just combined.
  5. Spread the batter evenly on the prepared baking sheet and bake for about 15 minutes.
  6. Once baked, remove the cake from the oven and immediately roll it with the parchment paper. Let it cool.
  7. In a separate bowl, beat cream cheese and powdered sugar until smooth.
  8. In another bowl, whip heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
  9. Unroll the cooled cake, spread the cheesecake filling over the top, and add sliced strawberries.
  10. Roll the cake back up gently, wrap in plastic wrap, and refrigerate for at least 2 hours before serving.
