- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 cup fresh strawberries, sliced
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, beat eggs and granulated sugar until light and fluffy, then add vanilla.
- Gently fold in the flour mixture until just combined.
- Spread the batter evenly on the prepared baking sheet and bake for about 15 minutes.
- Once baked, remove the cake from the oven and immediately roll it with the parchment paper. Let it cool.
- In a separate bowl, beat cream cheese and powdered sugar until smooth.
- In another bowl, whip heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
- Unroll the cooled cake, spread the cheesecake filling over the top, and add sliced strawberries.
- Roll the cake back up gently, wrap in plastic wrap, and refrigerate for at least 2 hours before serving.
