Ingredients

  • 1 cup unsweetened shredded coconut
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup sweetened condensed milk
  • 1 1/2 cups semi-sweet chocolate chips
  • 2 tablespoons vegetable oil


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, baking soda, and salt together.
  3. In another bowl, beat the butter, granulated sugar, and brown sugar until creamy.
  4. Add the vanilla extract and condensed milk to the butter mixture and mix well.
  5. Gradually add the dry mixture to the wet mixture, combining until dough forms.
  6. Shape the dough into small balls and place them on a baking sheet.
  7. Make a small indentation in the center of each ball.
  8. Bake for about 10-12 minutes, or until lightly golden.
  9. While the cookies cool, prepare the caramel coconut topping.
  10. In a saucepan, melt the caramel and mix in the toasted coconut.
  11. Spread the caramel mixture on top of the cooled cookies.
  12. For the chocolate drizzle, melt the chocolate chips with vegetable oil. Drizzle over the cookies once the topping sets.
