- 1 cup unsweetened shredded coconut
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1 teaspoon vanilla extract
- 1/3 cup sweetened condensed milk
- 1 1/2 cups semi-sweet chocolate chips
- 2 tablespoons vegetable oil
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, and salt together.
- In another bowl, beat the butter, granulated sugar, and brown sugar until creamy.
- Add the vanilla extract and condensed milk to the butter mixture and mix well.
- Gradually add the dry mixture to the wet mixture, combining until dough forms.
- Shape the dough into small balls and place them on a baking sheet.
- Make a small indentation in the center of each ball.
- Bake for about 10-12 minutes, or until lightly golden.
- While the cookies cool, prepare the caramel coconut topping.
- In a saucepan, melt the caramel and mix in the toasted coconut.
- Spread the caramel mixture on top of the cooled cookies.
- For the chocolate drizzle, melt the chocolate chips with vegetable oil. Drizzle over the cookies once the topping sets.
Notes
- Make sure to toast the coconut for extra flavor.
- Allow the cookies to cool completely before adding the chocolate drizzle.
